What is tonkotsu ramen?

Tonkotsu (literally 'pork bone') is a rich, creamy ramen broth made by simmering pork bones for many hours until the collagen and marrow break down into a deeply savory, milky-white broth. At Tatsu Ramen, three of our six signature bowls are tonkotsu: the Bold (our most popular), the Old Skool (classic Hakata-style), and the Red (tonkotsu spiked with our umami Red sauce).

Are you open late at night?

Yes — Tatsu Ramen is one of the few late-night ramen spots in Los Angeles. Sawtelle is open until 1 AM nightly. Melrose runs until 1 AM Sun-Thu and 3 AM Fri-Sat. Pasadena is open until midnight Sun-Wed and 2 AM Thu-Sat. Arts District DTLA is open until 1 AM Sun-Thu and 2 AM Fri-Sat. Check our locations page for the most up-to-date hours.

Do you offer vegan ramen?

Yes. Our Hippie Ramen is fully vegan — a plant-based broth slow-cooked with whole vegetables, finished with house-made scallion oil, sweet onion, and a hint of ginger, served over curly noodles topped with fresh spinach. The Naked Ramen (brothless) can also be ordered vegan by selecting 'Vegan' and 'No cheese.' All four LA locations carry these options.

Can I get ramen delivery in Los Angeles?

Yes. Tatsu Ramen is available for delivery across Los Angeles via DoorDash, Uber Eats, Grubhub, and our partner platform order.online. You can order delivery directly from any location page on our site, and pickup orders are also available through Toast.

Is there a gluten-free option?

We carry gluten-free noodles which are made from rice flour. Guess what, they are vegan too. Our broth can be made gluten-free as well but at this time our proteins and our eggs are marinated in regular soy sauce which contains gluten. We will put it on the side in case you still want it.
