What is Gothic Remake Lockpicking?

Gothic 1 Remake replaces the old left-right timing minigame from the original with a proper plate puzzle, and it shows up on chests and doors all over the colony. Each lock has between 4 and 7 rotating plates, and every plate carries a golden pin. Your goal is to land every pin on the center notch — position 0, shown as hole 4 in the lock view — so the bolt releases.
